Perfect for a hot night; try this chicken dish infused with the flavors of cool citrus.


4 boneless chicken breast halves
2-3 cloves garlic
1 tsp. lime peel, finely shredded
2 Tbsp. lime juice
¼ tsp. ground ginger
1/8 tsp. crushed red pepper
2 oranges

In a large skillet, cook chicken and garlic over medium heat for 8-10 minutes. In a bowl combine lime peel, lime juice, ginger and crushed red pepper and set aside. Peel oranges, and in a bowl reserve the juice, cut oranges in half lengthwise and then crosswise to make small slices. Take the juice from the cut orange and add to the lime juice mixture.

Pour entire mixture into skillet and then place the orange slices on top of the chicken. Cover skillet and cook for another 1-2 minutes or until heated through all oranges and juice mixture. Carefully remove each chicken serving, place on plate and spoon on any juice drippings remaining in the skillet.

Yield: 4 serving
